1. Stability to pH
The effect of pH on monascus pigment is complex, and the effect on each component of monascus pigment is not the same. General monascus pigment in the neutral range is relatively stable, even in the case of heating neutral is better, but in the acid and base two cases, more alkaline than acidic is better, less loss rate.
2. Thermal stability
It has been proved that monascus pigment has better thermal stability than other synthetic pigments, and its heat resistance is also excellent among natural pigments.
3. Photostability
The alcohol solution of monascus pigment is less affected by ultraviolet light, but sunlight decreases its chromaticity. By analyzing the photostability of red, orange and yellow pigments in monascus pigment, it is found that the photostability of red, orange and yellow pigments is very different. Yellow pigment has the strongest photostability, followed by red pigment, and orange pigment is the most unstable to light.
4. Stable properties of other substances
It has been proved that monascus pigment is not affected by common metal ions, oxidants and reducing agents.
5. Antimicrobial properties
The antibacterial test on 54 kinds of easily contaminated microorganisms in food shows that monascus pigment has strong inhibitory effect on Bacillus cereus, Mycobacterium, Bacillus subtilis, Staphylococcus aureus and Pseudomonas fluorescens.
The inhibitory effect of monascus pigment on Clostridium botulinum has been studied, and it has been proved that its extract can cause cracks in the vegetative cells of Clostridium botulinum, which is of great significance in meat production.
6. Antioxidant
Three antioxidant models, hydroxyl radical system, superoxide anion radical system and diphenyl bitter hydrazine free system, were used to verify the antioxidant activity of monascus pigment. It was proved that both red and orange monascus pigment had strong free radical scavenging ability, and the red pigment had the best antioxidant activity
